tiramisu

 
 
 


Last friday i baked sponge cake with mocha flavor. The cake was purposedly baked with that flavor...guess why??? coz I planned to make tiramisu. Still remember long time ago, emm I did not like cheese cake or anything to do with it. But then when I first ate tiramisu....emmm i changed my mind about cheese. since then I like cheese and anything that is cheesy hahahah .



mula let me story about sponge cake. i found the basic recipe of sponge cake from my mitsubishi microwave recipe book. it is quite a reliable recipe. niway...i am known as a person who likes to adjust here and there sooooo i made some adjustment by adding espresso paste and chocolate emulco into it and change the method of mixing it. I followed yang mazni`s way of mixing the mixture. so here is the recipe

Mocha sponge cake

120 gm tepung gandum/red rose/all purpose
100-120 gm caster sugar
4 biji telur
20-30 gm butter - dicairkan
2 sdb susu - dicampurkan ke dlm butter yang telah dicairkan
1/2 tsp espresso paste
1/4 tsp chocolate emulco

Masukkan telur dan gula dalam bowl. then letak dlm bekas yang berisi air panas atau macam kita nak cairkan coklat (double boiler) dan whisk it until lemon colored. but make sure jangan sampai telur ter masak plak . Keluarkan dari air panas dan guna electric mixer and beat until kembang dan ringan. At this stage i add the espresso paste and chocolate emulco and beat at low speed. ni kira 2 tujuan satu destinasi . nak sebatikan adunan dan juga nak pecahkan big bubble. Ayak tepung dan kaup balikkan tepung ke dalam adunan telur secara perlahan2 hingga tepung sebati dengan adunan telur tadi. Lastly masukkan campuran susu dan butter dan kaup balik perlahan2. Masukkan dlm loyang yang bergris or dilapik kertas bergris. Bakar pada suhu 180 C selama 35 minit.

*** untuk bekas 4 segi 20 cm in diameter hanya perlu 1/2 aja dari adunan di atas.




for the cream cheese mixture plak...emm recipe ni ku adjust, mix and match dari pelbagai resipi yang telah ku baca kat merata website termasuklah all recipe. I came out with this recipe masa tinggal kat jepun dulu. masa mix and match it...yang ada dalam kepala adalah yang senang dibuat, senang nak cari bahan, tidak mahal dan sedap. so inilah hasilnya.

cream cheese mixture for tiramisu

250 gm mascarpone cheese
- boleh digantikan dengan cream cheese atau dicampur dengan cream cheese . atau buat mascarpone substitute. ni ku dapat tips dari website ish tak ingat website apa... 225-250 gm cream cheese + 1/4 cawan whipping cream and blend till fine. and i used this as substitute for mascarpone baru2 ni)
60 gm gula
2 biji kuning telur
2 sdt perahan lemon (optional)
2 sdb serbuk kopi + 1 sdb air panas (i lebih suka serbuk kopi espresso blend klu tak ada boleh ganti ngan espresso paste, for me espresso memang mmg lebih menaikkan rasa tiramisu)
100-200 whipping cream/fresh cream

Satukan kuning telur dan gula dlm bekas dan whisk atas air yang mendidih until lemon colored abt 10 mins. In another bowl beat cheese till fine pastu masukkan kuning telur tadi and beat hingga sebati. Pastu add plak coffee mixture, kacau sebati. In separate bowl lak beat whipping cream till stiff peaks. Pastu gently fold in the whipping cream into the cheese mixture sampai sebati .

Proses penyatuan :

Coffee syrup:

1 sdb serbuk kopi dicampur dengan 80cc air panas

Sapu coffee syrup ke atas sponge kek hingga agak lembab kek tu. anyway depends on citarasa le. ku suka kek tu jadi lembab so kena le guna extra coffee syrup. Lepas tu baru le tuang adunan cream cheese tu ke atasnya. ini terpulang samada nak buat a few layers atau cuma 2 layers je. kalau banyak layers kena le bahagikan sponge kek tu. dah siap dilayer...eloknya simpan le dulu dalam peti sejuk untuk beberapa jam tapi jgn lupa cover bekas dengan plastic wrap. sebelum dihidang ayakkan serbuk koko ke atasnya.


Satu loyang tu ku kasi 1/4 kat fiza and lagi 3/4 tu ku makan ngan anak2 tak sampai sehari dah clear hahahaha. klu tetiap bulan buat tiramisu nih....mau jadi belon badan ku hahahaha

nic : tepat skali nic, memang sedap tapi tak leh selalu makan. merbahaya untuk kesihatan hehehe.

ida: sudah tergoda???? cepat gi cari cheese and krim godek wt tiramisu.

arrembawi: tiramisu tak dak oven pun tak pa...janji ada mixer dan peti ais hehehe. kek kat bawah tu boleh beli je sponge kek or ladyfingers. apa2 pun sabaq dek noooo...chek bila nak balik mai bercuti ke mesia??? sok dah balik...pekena puas2 kek ke apa2 yg suka lah...

mommy_d&d : tq for coming. copy le apa ko suko...ku no halnyer...klu tak mau share tak ada le nak letak kat cini hehehe. ntah ku pun tak tau kenapa letak telur kuning, dulu ku pikir telur kuning tu mungkin untuk ganti gelatin ...coz rasanya klu tak silap ingatan le...yg ada gelatin tak ada telur kuning dan sebaliknya. since ku nk avoid penggunaan gelatin ku guna le telur kuning.




Haaaaiiii...bnyk sungguh lah versi tiramisu ni sampai tak tau dah yang mana nak cuba buat pertama kalinya nanti..mmg tak pernah try lagi!! ..Mungkin ini pilihan yg bagus..
**Badan jadik belon tak pe lagi..masih montel , cekang dan gebu..jangan MELETUP jer!!!! ...
